By day, Cosmopolitan's long dining room is brightly sunlit, with a sidewalk-café-style ambience and a close-up mountain view. By night, it turns romantic and more formal, with dazzling white napery, sparkling flatware and stemware, and subdued lighting. Owner-chef Chad Scothorn and chef de cuisine Aaron Woo change the menu weekly, melding Southwestern, Northeastern, Asian, Italian and French influences into fine contemporary American cuisine. Fresh, natural ingredients are assembled into picture-perfect presentations.
