Located in a charming Craftsman-style house, Tilth's small, candlelit dining room is painted in luscious shades of green and yellow that glow after sunset. The subdued ambience makes a fine setting for owner-chef Maria Hines's innovative cuisine that stretches boundaries but never becomes precious. Chef Hines is known for her inventive dishes along with her commitment to organic ingredients. Dishes may be ordered as small plates to share or individual entrées. To begin, consider the tartlet of fromage blanc, fig and black walnut, or the truffle cauliflower flan with hints of Meyer lemon and tarragon. Entrée standouts include slow-cooked pork cheeks in an intense pancetta-Parmesan broth, nicely seared tuna with an avocado and grapefruit sauce, and mini duck burgers served with fingerling chips cooked in duck fat. Desserts are also impressive, particularly the cleverly deconstructed cheesecake and a wickedly good chocolate ganache cake. Tilth's carefully chosen wine list focuses on Pacific Northwest and California vineyards. Service can be gracious and polished but may be inconsistent.
