Beast Description:
Chef Naomi Pomeroy operates this intimate, attractive dining room featuring communal dining and two seatings a night. The rules here are straightforward: the menu changes every day and there are no choices. The meal is prix-fixe only, and the staff politely declines substitutions. But those who play by the rules are treated to a lovely meal, one that's somewhat French and served straight from the Portland area's local farm scene. The six-course dinner begins with soup and moves into a charcuterie plate that may include chicken liver mousse, foie gras bonbon, pâté du porc, steak tartare, and quail egg toast. Entrées range from duck breast with sour cherry chutney to leg of lamb with goat butter or steak béarnaise. The salad course is usually a refreshing break from meat. The meal then ends with two cheeses and a dessert. The wine list is "focused" with a half-dozen reds and whites handpicked to complement the daily menu. Diners can opt for wine pairings with each course. Brunch here is a beautiful dream in four courses. The kitchen is open to the dining room, the ambience loud, and the chairs notoriously hard, but the food and adventure make up for any minor discomforts.
