Autentica Description:
Oswaldo Bibiano hails from Guerrero, Mexico, and trained in some of Portland's finest restaurants. It's no surprise that his restaurant, Autentica, serves some of the most traditional, sophisticated Mexican food anywhere. The casual dining room features terra cotta tiles and a dramatic open kitchen. The food here is an adventure through local ingredients and imaginative cooking. Dinner dishes include genuine Mexican tamales, tacos, enchiladas---and lots of surprises. The crema de calabaza is a savory winter squash soup served with toasted Mexican bread and Serrano pepper purée. The codornis con chile negro is pan-fried boneless quail nestled in a dark chile sauce. Perhaps the best example of Autentica's spirit is the mole sauce, made from 30 different ingredients including nuts, anise, plantains, cinnamon, chilies and chocolate. Brunch is a muy bueno way to begin a Sunday.
