Those who wish to know what chefs actually eat should dine late here for the chance to watch them enjoying gutsy peasant cooking very different from their own. Soups as familiar as wonton or as unusual as in clam and pork with bean curd are more interesting than hors d'oeuvres. Hotpots include stewed duck with yam, and for the really brave, stewed fish head with bean curd. Diced chicken in hot sauce lives up to its name, with water chestnuts providing a happy contrast of textures. Set menus for a minimum of two people £12 to £20.
