Chef James Dumas welcomes you to the Goldener Hirsch Restaurant which features contemporary Alpine cuisine with a seasonal American spin in a mountain setting.
In addition,to a nightly menu, special events such as wine dinners and cooking classes are scheduled.
Linen-topped tables, pine wreaths, hand-carved wooden chairs and a stone fireplace evoke the feel of an Austrian lair. The richly-flavored onion soup buoyant with caramelized onions, and topped with Gruyère and Emmental cheeses, provides comfort and warmth. The fennel-cured Columbia River salmon appetizer with arugula with horseradish croutons and caraway crème fraîche rivals anything you might find in a coastal restaurant. The confit of rabbit and porcinis with farro or the cast iron-seared elk flank steak are robust, but not too gamey. Toast your meal with one of the more than 2,000 bottles of wine from the notable cellar. Be sure to save room for the decadent Amano dark chocolate fondue with berries, cookies and bananas. By the way, make reservations and ski in for a winter lunch. It's actually faster, like-priced and more civilized than Deer Valley Resort's cafeteria.
