Bilson's Restaurant Description:
Tony Bilson has been called the "godfather of Australian cuisine" and was one of the founders of the original Berowra Waters Inn. His career has seen him in many venues but perhaps none that fits his skills more than this restaurant. With his eponymous venture he has the canvas to indulge diners in his fine French cuisine. His eight-course dégustation menu reveals classic dishes given the Bilson touch, such as rockfish and squid ink quenelle with Petrossian caviar or pan-roasted hiramasa kingfish with peas, spring onion and crisped lard. But he is a master of flavors too, not afraid to serve a selection of seafood with a seawater jelly, or offer a dessert surprise of a tabbouleh of strawberries and mint. True to his French aspirations, the wine list features many wines from France as well as Australia, and the cheese platter is always worth considering. This elegant restaurant, hung with paintings, makes a fine venue for food and wine of this standard, and a fitting evening venue for most occasions.
