It's refreshing to rock up at lunchtime to this leafy and lovely spot, sans bookings. Nighttimes there may be a few minutes delay, but staff are cool. They will put your name on a waiting list, settle you in the bar for a drink, even hold a table if you prefer to charge your glasses first. Owner and Sydney food doyen Damien Pignolet set the tone for this classic bistro years ago, and it has become the benchmark for others in town. It's no surprise that the notable wine list offers many French labels and fine vintages, with a considerable number by the glass. These days, chefs Scott Mason and Kylie Collins Grey keep the diners' dream alive with their distinctive dishes. Beside a cheeky mural by Michael Fitzjames stretching the length of the room, you might begin with a house special of boudin noir with roast parsnips and sauté apples with horseradish cream sauce, or pan-fried calf's liver served with witloof. Then move on to gnocchi Parisienne with flageolet beans, Pignolet's benchmark salmon marinated in Sauvignon Blanc, or maybe a robust dish of Bistro Moncur pure pork sausages with Lyonnaise onions. Save special space for the prune and Armagnac double-baked soufflé. On a sunny day in Sydney, life hardly gets any better than this.
