For a slice of haute Singapore cuisine, find your way to Wild Rocket, a smart dining outpost by lawyer-turned-chef Willin Low, at the Hangout Hotel atop the serene Mount Emily Hill. Humble local ingredients---dried shrimps chili paste and "laksa" paste---are prepared in continental style to yield a Singaporean-influenced modern European cuisine. Never mind that some of the ingredients may sound alien; just come with a curious appetite and open your palate to the melange of flavors from chef Low's successful fusion cuisine, such as slow-braised dark soy pork served atop a raft of rigatoni pasta. Also give a shot at Low's rendition of dried shrimp and spicy conpoy (dried scallop) spaghetti where the piquant dried shrimp chili paste plays star to an otherwise European cast. For a main course, target the fish dish where a confit of "chai po" (salted chopped radish) is served neatly atop a well-roasted Chilean sea bass with local-style congee on the side. Wild Rocket has a wine list of over 60 labels, with 40 percent old-world. Desserts are also fusion-style, but if you prefer a familiar sweet ending, opt for the signature deconstructed strawberry cheesecake or warmed dark lava chocolate gateau.
