Oenotheque by Wine Universe Description:
Oenotheque by Wine Universe is one restaurant that takes its Swiss tipples very seriously. It is, after all, a joint project by Swiss vintner Dominique Giroud in collaboration with chef-turned-restaurateur Magdalene Tang. Oenotheque translates to wine repository, but what a dull moniker for such a slick and handsome space. The glass-enclosed, 2,700-square-foot gastro bar is tucked away on the ground floor of Millenia Walk and offers a triumvirate of oenophile-pleasing concepts: a wine bar, a wine gallery that retails over 100 varieties of pedigreed Swiss wines plus old- and new-world labels, and a swish restaurant with wine sommelier service to boot. Ex-Club Gascon sous chef Paul Longworth helms the stainless steel-clad open kitchen where he performs his culinary swagger behind a U-shaped marble-topped table in a black-bathed dining room. The menu is part classic, part modern French cuisine executed and plated with aplomb. Choosing favourites is impossible but you will not want to miss the saddle of lamb in a mustard-perfumed leek sauce; escabeche of squid, piquant chorizo and braised carrots lounging in a savoury broth; and moist black cod crowned with petite pearls of green olive in a capsicum-reduced sauce. An à la carte menu offering Swiss favourites of fondue dips and pungent raclette are also available nightly after 6pm.
