Min Jiang at One-North is a Cantonese cum Szechuan restaurant located in the chic Rochester Park dining precinct of Singapore. Spotlights and low-hanging bronze lanterns illuminate the dark chinoiserie-styled interior while a black slat divider separates the cozy dining room from the reception area. By dusk, the best seats in the house are at the outdoor timber dining deck. Authentic Beijing duck is the name of the game here; the wood-fire-oven roasted fowl is carved by your table and served in three different styles: crisp skin dusted with sheer sugar; Cantonese style---crêpe with sweet sauce, leek and sliced cucumber; and Szechuan style---crêpe with chopped garlic, white radish and Tientsin cabbage. Also notable are the lobster noodles, silky and fragrant with luscious half-shell baby lobster. The vegetable dishes here are consistently good, too: from Szechuan staples like stir-fried string beans with minced meat to the Canto favorite of stir-fried asparagus with honshimeji mushrooms. Durian lovers should not miss Min Jiang's legendary pungent durian pudding; otherwise, there is always mango pudding or the highly refined double-boiled hasma (dessert made from dried oviduct of snow frogs).
