Tucked away on the fourth floor of the ritzy Ngee Ann City mall, this restaurant invites with a stately entrance, grand marbled reception area, cozy nooks with banquettes and a white-and-red beaded dining room with dark wood panels. But the main draw here is the refined Teochew cuisine, arguably some of the best in Singapore. (Originating from ChaoShan in China, Teochew cuisine is well regarded as healthy, with an emphasis on steaming, braising and poaching.) Globes of fish maw lounge in a pool of intensely flavored chicken soup and addictive cold flower crab (from Hong Kong) is served with individual portions of ginger and vinegar dip. Don't miss the mounds of thinly sliced braised goose meat sitting on blocks of silky bean curd as well as braised assorted vegetables of radish, Tientsin cabbage (a mildly flavored cabbage predominantly grown in Asia) and mushrooms with Jinhua ham (a dry cured ham named after the city of Jinhua in China) in a flavorsome and savory light sauce. The steamed pomfret fish with tomatoes, plums and salted vegetables topped with Chinese celery is a show-stealer, too. Imperial Treasure's wine list is a balance of old- and new-world, with about 100-plus labels. Leave room for dessert: thick, smooth paste of sweetened mashed taro with gingko nut or black sesame paste wrapped in glutinous rice dough with a coat of grated peanut.
