High ceilings, tile and dark wood add an elegant touch to these casual eateries. The secret to the preparation speed is a Swiss-made machine that portions, cooks, and drains a serving of pasta in 90 seconds. Diners can choose a style of noodle and then select from numerous sauces, such as Fontina, Parmesan and Gorgonzola cheeses, bacon and peas in a garlicky white wine cream sauce, or pungent puttanesca with olives, capers, hot peppers, tomatoes, anchovies and garlic. Add a green salad or take the soup-and-panini route. Breakfast features scrambled egg panini. Good Italian-style coffee and friendly staff are a plus.
