Posh calls its food "improvisational cuisine," a seasonal approach to modern American cooking in which the diner chooses ingredients, notes preparation preferences and then lets the kitchen go wild. Think of it like a sushi bar, where diners check off their choices in boxes simply titled "smoked pork belly," "rabbit," "diver scallops," "duck" and such. Choose your courses (from four to limitless), and chef-owner Joshua Hebert creates a custom meal with wine pairings. That means, for example, that the same table may get white asparagus poached with bruléed miso aïoli, or in soup with osetra caviar. For extra thrills, snag a counter seat overlooking the open kitchen to watch the chefs in action.
