With its bronze light fixtures, arched windows and velvet curtains, the restaurant at the Hotel Monaco Salt Lake City has an urban, sophisticated feel. Executive chef Nathan Powers, who has worked at notable San Francisco restaurants such as Stars, Hawthorne Lane and Farallon, has created a seasonal, modern American menu that favors sustainable ingredients. Starters include blue cheese house-cut potato chips, roasted corn bisque and spicy crusted calamari. From the entrées, the maple-brined pork porterhouse chop with whiskey cider butter and white cheddar polenta is a standout. A special menu of three courses for $33 is also available each evening. Diners can complement their meals with a selection from the mostly American wine list, with many options available by the glass, or with a local brew such as Polygamy Porter or Provo Girl Pilsner. Don't bother trying to find parking on the street; use the valet or you'll miss dinner.
