This old school dining room in The Benson hotel has served an interesting spectrum of notable lodgers, from U.S. presidents to the Rolling Stones. The warm wood paneling and rich tones evoke a civilized air, but the atmosphere isn't as staid as the décor or name imply. Instead, traditional American fare is prepared with contemporary verve from regional ingredients. More innovative entrées include scallop-and-crab-encrusted halibut served with beet couscous and saffron beurre blanc or chicken breast stuffed "under the skin" with goat cheese, pine nuts and morels. Mix and match selections from the extensive wine list with the bold menu. Breakfast and lunch here are equally innovative.
