Another winner from chef-owner Jose Garces, Chifa re-creates the quirky hybrid of Peruvian and Cantonese cuisines introduced in Lima by Chinese immigrants in the late nineteenth and early twentieth centuries. Garces, also known for Amada, Tinto and Distrito in Philadelphia, and Mercat a la Planxa in Chicago, traveled to Lima to research the many Chifas there---and his take is both sophisticated and sizzling. Settle into one of the spacious booths---the décor is part sexy opium den, part Latin chic---and sample flavors and ingredients from both Asian and Latin cuisines. Garces offers dishes such as traditional Chifa-style fried rice with Chinese ham, egg and scallion; and aji gallina, a classic Peruvian dish of slow-poached chicken in a spicy aji pepper sauce. The pork belly buns, tea-smoked ribs and scallion pancake are impressive, as is anything from the ceviche bar. Try one of the special cocktails such as the five-spice rye Manhattan, or for summer, a refreshing mint and lima bean gin fizz. The $18 lunch special is a good deal.
