Ribouldingue Description:
Nadège Varigny, whose father is a butcher in Voiron, in the Alps, is the new young owner of this restaurant, formerly named Fogon. Having worked with Yves Camdeborde before and a real gourmet person herself, she caters to her guests in the two cozy rooms of the restaurant with a great sense of humor. A rare opportunity for those who love offals. They can indulge in a brawn salad, lamb's brains "meunière", white kidneys in parsley and garlic sauce, tripes cooked in white wine. Others will enjoy the "blanquette" of monkfish or the piece of pollock with eggplant caviar and crispy lardons (bacon cubes). As dessert, go for the "crémeux" of lemon, mascarpone crumble or rice flan. This can be paired with a bottle of Graves de Vyre, Château Toulouse 2005, at 19 €. The very good value definitely makes it a great place to go for. Prix-fixe menu at €27.
