What used to be the Petit Coin de la Bourse is now globe-trotting chef Samuel Cavagnis' Le Versance. The salad of mullet on toast with vinaigrette, the cream of chestnut soup, or even the filet of John Dory and beef tail with coriander and soy sauce all give an idea as to Cavagnis' flavorful and transient cuisine. Opt for the chocolate dessert. Lunch menus range from between €32 to €38; an à la carte meal costs around €55.
