Discreet Hideo Yamaguchi gets his fish from the best merchants in the wholesale market of Rungis: wild sea bass, red labeled salmon and tuna to prepare sushi and sashimi, salmon "roses" perfumed with saké or marinated fish on a bed of vegetables.
