A longtime tourist attraction, the historic village of Hillsborough now has a restaurant worthy of its many other charms. Panciuto, in a restored brick-walled storefront across from the old courthouse, offers a small but intriguing menu that should delight the most discriminating foodies. Owner-chef Aaron Vandemark learned the subtleties of Tuscan cuisine while working with Gennaro Villela, former chef of Chapel Hill's respected Il Palio. Vandemark is adamant about using only the freshest local produce and meats for his Northern Italian-inspired cuisine. On any given evening, Panciuto's nightly changing menu may include butternut squash ravioli with wilted greens and toasted pumpkin seeds, a cider-glazed pork shank with cabbage risotto, seared quail with polenta and a whiskey balsamic reduction, long-braised duck ragù with pappardelle, and our favorite, a warm hazelnut cake with chocolate ganache and banana ice cream. The expertly chosen wine list offers Italian bottles from small family-owned vineyards, and you can count on the knowledgeable staff to guide you to enchanting pairings.
