The unconventional Jean-Georges Vongerichten has set up his restaurant inside the Trump International Hotel, at Central Park West. Excessively fond of wild herbs and oriental flavours, he prepares a multitude of inventive French new-cuisine-style dishes, including "thon blanc et rouge mariné à l'huile d'olive et citron", in a resolutely restrained, contemporary setting.
