Crudo means raw in Italian, and at this addition to the Clinton Street restaurant row, that describes the seafood and the walls. Tabla alum Seamus Mullen works in full view behind the bar, crafting his briny jewels---scallops ringed by prosciutto, slices of mackerel atop pieces of pomolo, perfect hamachi topped with ponzu. Mullen artfully gives his creations international accents with unusual ingredients like huacatay mint (it grows in the Amazon), Austrian pumpkin seed oil, and Peruvian aji panca pepper. Dishes come as tasting or sharing sizes, and you can pair them with a well-chosen list of accessible wines available by the taste, glass or bottle. A sibling to tapas spot 1492 (their gardens are connected), Crudo’s textured-plaster walls recall sand, and the tabletops are like polished driftwood---an impressionistic seaside.
