Food Network star and ex-Paladar chef Aarón Sanchez has settled into über-trendy TriBeCa, offering a savory sampling of all 32 regions of Mexico: sinfully spicy picadas (a trio of corn tarts with avocado-tomatillo salsa, roasted tomato salsa and queso fresco) represent Michoacán; cochinita pibil (slow-roasted suckling pig marinated in achiote, garlic and bitter orange) is from the Yucatán; and in Jalisco style, birria (braised short ribs with ancho chile broth). Also on the menu, the Plato de Mer ceviche deserves top honors: conch (habanero, cilantro, orange juice) and shrimp (mango, jalapeño, lemon juice) taste as though freshly plucked from the sea. Likewise, expect a happy palate if the Pescado Michi (pan-seared halibut with cilantro, lime and Serrano chilies) is listed on the menu. Amid terra cotta walls and an open kitchen, the jovial ambience starts at the zinc bar with the frozen margarita machine and the dapper after-work crowd filling the area. The focus is on the taste buds and a friendly staff that is always eager to refill an icy margarita or a Menta Magico (the specialty drink---a mojito sweetened with agave nectar).
