It's hard to improve on the already beloved banh mi sandwich, but at Baoguette, Michael Hyunh manages to do exactly that. In this tiny storefront space, they serve more than just a classic sandwich, though the original is the best place to start. Here, they substitute pork belly for pâté and include a dab of mayonnaise for good measure. After that, things start to get a little bit weird, with iterations like the spicy catfish banh mi, with a vibrant yellow that's bolstered by pickled red onion and cucumber relish, or even a "sloppy banh mi" with basil and curried beef. There are non-sandwich options, including a sinus-clearing noodle soup with pork belly and vermicelli, summer rolls filled with fat, juicy shrimp and Vietnamese iced coffee. Hyunh's off-the-wall take on Vietnamese fast food makes for a culinary experience that's above and beyond the typical sandwich joint, and definitely worthy of a visit.
