Chef-owner Prakit Paul Prem-on demonstrates that presentation is everything with his feast for the eyes, ears and palate at his namesake eatery Prem-on Thai. This modern restaurant melds traditional Buddhas and silk banquettes with modern Eames chairs in an ambient atmosphere filled with mellow music for the Chelsea-like clientele. The sleek design, however, fades to the background when compared to the food---think appetizers of Thai hand rolls filled with vermicelli noodles and roasted pork that arrive in a glass with a Thai plum-and-sesame-vinaigrette dipping sauce. Coconut shells hold an entrée of chicken green curry with coconut milk, Thai eggplant and bamboo shoots. The pan-seared snapper is topped with a savory mélange of pineapple, lychee, red curry and coconut milk and goes well with a plum sakétini or opal pearl martini from the extensive drink menu.
