Only in Oregon's wine country will you find a restaurant named after the official state dirt. Jory is the soil that makes Oregon grapes special, and that distinct quality is reflected in this elegant restaurant within The Allison Inn & Spa, a destination resort. The dining room is gracious and comfortable, aglow with muted colors and gleaming wood. The open kitchen bustles around a crackling wood grill. The chef's table offers front-row access to the lively kitchen as well as specially made fare. On fine days, the outdoor patio is a pleasant spot to gaze at the sweeping vistas. Jory's changing menu is composed of inventive dishes created from the Willamette Valley's bounty. Entrées may include "tails to trotter," a pairing of belly-wrapped pork loin with Umbrian lentils and caramelized beets, ruby red trout and spot prawns over wild rice salad with verjus emulsion and wild mushrooms, and grilled Muscovy duck breast with farro, bacon, wilted arugula and hazelnuts. Of course, wine is featured prominently here, with over 700 bottles and 50 wines by the glass. Naturally, Oregon selections are the star attraction---there are more than 100 Pinot Noirs---but there are commendable selections from across the globe as well. This destination is absolutely worth the trip.
