Don't let the building's bland exterior fool you. Walking into the Graves 601 Hotel's ultra-minimalist lobby is a little bit like buying a plane ticket to New York City. The stylish venue's equally chic restaurant has a contemporary vibe that manages to be both sleek and comfortable. The kitchen's creative, modern cooking (Håkan Lundberg is the chef du cuisine) reflects the surroundings, typified by bright flavors and bold colors and built with topnotch ingredients. A lobster salad brimming with farm-fresh herbs, a luxurious foie gras terrine, Minnesota-raised duck prepared sous vide-style and accented by a woody mushroom cake, ahi crusted with toasted wild rice---all are prepared with panache. At lunch, this is the place to seal a business deal over the signature pad thai or a lobster club sandwich. The dessert to target is the Cosmos Globe, a seasonal fruit sorbet-filled chocolate orb that melts tableside as a rich dark chocolate sauce is poured over it. The seamless service is a tailor-made fit for the room; the wine list has true ambition; and the cocktails are fun and sassy.
