Executive offices have morphed into private dining alcoves; the steel-reinforced concrete vault now serves as a wine cellar protecting bottles of Krug and Caymus; sought-after "diner" stools front the open kitchen, where tellers once toiled. Today it sends out first-rate dishes like poached lobster and risotto croquettes, luxed up with truffle butter; deviled eggs spangled with dual caviars; and a tartare plate of salmon and tuna poke. And those are just the starters. Deposit your Visa and withdraw the walleye (Minnesota's iconic state fish) paired with butter-poached lobster swimming in warm vichyssoise or Med-inspired rack of lamb with white beans, ratatouille and a rosemary-mint gremolata. Clever (but not over the top) desserts are served in shot glasses to ease buyer's remorse.
