This was an incredible dining experience. We were treated to a private tour of the cocina, which was the most beautiful kitchen I have ever seen in a restaurant. It would be the envy of any chef. We were greeted by the executive chef, Marco Bustamante, who gave us information and answered questions about the menu, local produce and fish. I would happily have pulled up a chair and eaten my dinner right there. The meal was served on the terrace, where we had a view of Capella's beautiful outdoor gardens and pools. We listened to the sounds of the waves crashing on the beach and watched a gorgeous sunset over the Pacific. I had an incredibly tender, succulent filet of sole baked in a banana leaf, with a lemon, olive, caper and tomato sauce, and my companion had a fish stew that was superior to any French bouillabaisse I have ever tasted. After dinner we continued our tour with a visit to the wine "cellar" (actually above-ground) and the special room for tasting tequila and smoking cigars. We both tried Azul "sipping" tequilas and became instant fans. I just cannot praise this restaurant enough. It is reason enough to choose Cabo San Lucas as a vacation destination.
