Cayton's at The Ritz-Carlton, Dove Mountain offers memorable and inventive modern American cuisine. The short rib slider is a prime example. Chile-dusted and topped with manchego cheese and caramelized onions, the kitchen can hardly crank them out fast enough. They are a good accompaniment to the sizzling hot and crispy sweet potato fries. The salads are equally impressive, but we especially like the tortolita, where greens, candied walnuts, grilled seasonal fruit and an herb aïoli come together as a successful Southwestern nod to the traditional Waldorf. For entrées, the grilled hanger steak is lush and satisfying and the chili croquettes that come alongside are pure fun. Desserts are also clever (we suggest the Mexican chocolate cake that has a bit of a chili kick) and the wine list has plenty of intriguing choices.
