Let the barbecue wars begin! In Lockhart, Texas, four of the "best" barbecue parlors in the state sit within five minutes from each other. Chisholm Trail is one of the newer ones that rolled into town in the '70s. It's distinctive for its bounteous cafeteria setting with a special assortment of side dishes like fried okra, homegrown squash, green beans and a salad bar. But the terrific barbecue brisket, fajitas, pork chops, smoked turkeys, and their own recipe sausage are what make this spot hot. No wonder the Senate passed a resolution proclaiming Lockhart to be the "Barbecue Capital of Texas."
