Chez Paul Description:
Chez Paul has been a perennial favorite on Maui for years, and it certainly has an asset in Patrick Callarec as the chef-owner. Look for chilled fennel-and-potato soup, homemade duck pâté, beluga caviar, escargot, Kona lobster with fresh foie gras and tournedos of beef in three-peppercorn sauce. This is a fine French restaurant by any standard, but Maui casual. The restaurant also serves Sunday brunch, when you can enjoy prosciutto de Parma with figs and melon in port wine or a lobster cappuccino in Cognac cream on a leisurely Maui day, but with the same excellent service for which Chez Paul is known.
