The Banyan Tree Restaurant Description:
Chef de cuisine Jojo Vasquez (Jer-ne) has left the kitchen, and chefs Ryan Urig and Matthew Srebrow, both with The Banyan Tree for many years, have taken over. As in the Middle East, diners can dip their bread in oil and dukkah, with the addition of macadamia nut meal to the crushed seeds giving the dish a Hawaiian spin. Enjoy dishes made from the islands' topnotch fish and produce, such as Kona kampachi with sizzling peanut oil, spinach and enoki mushrooms, and the pine nut-crusted ahi with cucumber noodles and Thai basil pesto. You won't see the banyan tree, which used to grow through the middle of the building, but on a clear day you can see the Kapalua coastline and Molokai from many of the tables and the open-air patio.
