Run by the Lovisolo family since its opening about 35 years ago, the Michelin-rated Violetta has a bright and welcoming atmosphere. Look out for the carne cruda alla monferrina (monferrato-style carpaccio), sformato di verdura (vegetable flan), agnolotti piemontesi (miniature, regional ravioli), tajarin, fritto misto alla piemontese, faraona farcita (stuffed guinea-fowl) and brasato al barolo (beef braised in barolo wine); for dessert, try the semifreddo al torrone (soft hazelnut nougat) or the bonet. In autumn only you will find cardi gobbi (cardoon, or artichoke thistle) di Nizza, porcini mushrooms and white truffles. In spring and summer, try the vegetables in aspic and the rolled rabbit.
