Shanghai Garden Restaurant Description:
This is our pink oasis (that's the color that predominates in the dining room at the Shanghai Garden restaurants) when we're craving dumplings or a noodle fix. Even more so since, curiously, there's not a lot of truly great Chinese food in Seattle. Chef Hua Te Su, who apprenticed in Taipei, adheres to classic techniques, but doesn't restrict himself to tradition. His menu is constantly evolving. Su's hand-shaved rice, corn or barley green noodles make for chow mein like you probably have never tasted before. We have yet to discover a way to consume his delectable soupy dumplings without making a mess, but that doesn't stop us from ordering these packets of dough filled with some combination of minced pork, shrimp and crab together with a spoonful of hot broth that explode with flavor in the mouth. Look under the specials section of the menu to find spectacular cold appetizers like spicy cucumbers or braised bamboo. Must-have dishes include bamboo fungus with green cabbage; pea vines with black mushrooms; scallops or shrimp coated in white pepper and sweet potato powder that are deep-fried to a delicate crunch; and chicken breast in a sweet, yet tangy, strawberry sauce. Don't leave without a taste of Su's ice cream du jour made from honeydew, sour plum or dried longan, a lychee-like fruit. Want plain vanilla? You can have it---fried in a wonton wrapper.
