Diners can choose a style of noodle and then select from numerous sauces, such as those made with Fontina, Parmesan or Gorgonzola cheeses; a garlicky white wine cream sauce with bacon and peas; or a classic puttanesca with olives, capers, hot peppers, tomatoes, anchovies and garlic.
