Our favorite? Waimea Bay rock shrimp with Maui pineapple and Mauna Kea goat cheese, or the Paniolo with imu Kalua pork, Maui onion and jack cheese. Freshly squeezed juices, house-baked muffins and just-picked tropical fruit are perfect for lighter appetites. Of course, the coffee is outstanding. Dinner finds the focus on seafood. The menu features some classic offerings like grilled ono with pineapple salsa over a spinach salad or oven-roasted sesame opah done Szechuan-style with garlic, chilies and scallions, but you'd be remiss if you didn't check to see what is fresh that day. You never know what from-the-sea treasure you might find. Finish the meal with a Baked Hawaii---a decadently moist pineapple upside-down cake topped with Tahitian vanilla ice cream then finished with sweet meringue and toasted coconut---it will leave no doubt that you are in paradise.
