Unlike other cities, Asian restaurants in Providence have a tendency to offer several cuisines at once. Initially, this may not seem like such a good idea. But consider that the cooks in Asian kitchens are often a mixed bag of national backgrounds. This is how we rationalize the fact that Hong Meas serves Vietnamese, Thai and Cambodian dishes with oft-equal levels of panache. How can we tell? Well, the Cambodian salad (or nyom) is an astute and crunchy toss of cabbage, carrots, peppers, Thai basil, cucumbers and chicken with lime juice tang and chili spark. Curries have impressive depth. And banh hoi, the Vietnamese staple, comes with beef redolent of lemon grass and char, and a nicely salty-sweet-sour dipping sauce, alongside the requisite lettuces, herbs and noodle patches for bundling. Even if the décor would do just as well in a ramshackle Phnom Penh storefront, we're smitten.
