Chef Sharon Hage has done a remarkable job transforming the little house where York Street resides from a dimly lit, cozy standby to a stylish, softly lit, black-, white- and gray-toned destination restaurant. And in a flashy town like Dallas, chef Hage's calm, elegant, luxurious menu is a standout. A warm towel, a glass of sherry, and a bowl of almonds and olives arrive when you are seated, guaranteed to relax and prime you for your meal. Though the menu changes daily, it always features outstanding lamb, duck, veal and seafood dishes with seasonal sides, fiddle head ferns one day, haricots verts the next. Desserts tend towards cobblers, tarts and crisps, not towering spun sugar fantasies. Wines by the glass are suggested for each entrée and the well-structured wine list, though not long, is full of interesting choices at reasonable prices.
