Green Room Description:
This chic eatery and late-night lounge brings the big city to Burlington. Owner James Ryan and executive chef Dave Pratt are consummate hosts. Their "shared plates" selections create a seductive ambience, where guests can huddle around dishes, sampling at will. With sexy house beats and entrées like lobster risotto, the mood is decidedly chill. Pratt's eclectic menu favors fusion over convention, with unusual pairings, like trout or duck confit quesadillas. The latter is a smoky, flavorful twist on the crisp and fatty bird, which teases with hints of habanero mayo. Also noteworthy is the tender (if tiny) Cavendish quail, locally raised and stuffed with Vermont's own McKenzie sausage. Service is friendly, though couches warrant fewer visits from the staff, and clientele can border on elitist as the hour grows late.
