Few chefs are content to make their second act a pint-size one, but such was the difference with Barbara Lynch of No. 9 Park when she opened B&G Oysters (which she followed soon thereafter by a neighboring charcuterie, The Butcher Shop; and now she's added a farmers' market, Plum Produce, to her block-long empire). She has carved a studio-size space out of the South End's epicenter---the corner of Tremont and Clarendon---and decked it out in cheery tiling, a handful of tables and a gleaming bar that hedges in the tiny open kitchen, where her proficient crew keeps the cooking simple. Think overstuffed lobster rolls. Lardon-laced clam chowder. Fried faves galore (with homemade tartar sauce, of course). A smattering of seasonal items like intensely rich pasta carbonara with lobster and mascarpone. And, of course, a daily-changing repertoire of raw oysters from all up and down the eastern seaboard, to be paired with a wine list dominated by whites, both still and sparkling, by the glass. It's been waiting-list-worthy in the eyes of all but claustrophobes and penny-pinchers since day one.
