Expect no frills, but the steaming bowls of chicken or beef broth with meat or seafood and thin rice noodles are large and inexpensive and go well with a chilly spring roll brimming with crisp vegetables. Add bean sprouts, lime, fresh basil leaves and plenty of hot chile sauce before moving on down the highway. The slow drip of coffee into a layer of thick condensed milk, a traditional Vietnamese beverage, before or after your pho is comforting in its simplicity.
