The Corn Maiden Description:
Honoring its setting on the Santa Ana Pueblo without hamming it up, this resort restaurant offers as close to a first-class, big-city fine dining experience as Albuquerque, far more beloved for its dives, ever comes. It specializes in prix-fixe tableside rotisserie service and features the unusual likes of rose-sea-salted buffalo rib-eye, lavender-salted shrimp, and wild boar sausage with cranberries. But lovely surprises abound on the à la carte menu as well, from blue-corn-crusted calamari with jalapeño-coconut dipping sauce to escargots with red chile glaze and cream in puff pastry. No less eye-popping is the vista of the Sandias---never mind the panorama of the dessert cart, displaying six to eight seasonal sweets, including a confection-filled chocolate box. The wine list is suitably extensive, although it lacks much geographical diversity.
