Chameleon Café Description:
Chameleons are famed for blending in with their surroundings. And in a way, Chameleon Café is a perfect match for sweet, leafy Lauraville. A family business---he's the chef, she runs the front of the house---it has a welcoming, handmade look, from the sponge-painted, pumpkin-hued walls to the framed art, which sometimes showcases the work of talented grade-schoolers. The surprise is that Chameleon, for all its down-home charm, is one of the best fine-dining restaurants in Baltimore; Jeff Smith's cooking would be equally at home in a decorator-glossy bistro in the swankest neighborhood in town. The chef, an alumnus of Emeril's in New Orleans, offers a seasonal menu of American fare, prepared with classical French techniques. His scallops and his rare lamb loin with mushroom duxelle melt in the mouth, his sauces are first-rate, and his garnishes are as tasty as they are decorative. In summer, don't miss the Maryland menu of local specialties, and the house-made charcuterie is impressive in any season.
