It'll arrive as a delicately sauced heap of crisp-tender vegetables seasoned with the meat---shrimp, chicken, beef---of your choice. But even standards like kung pao chicken, garlic shrimp, and double-sautéed pork exhibit the same light hand and thoughtful composure. Beer and wine are served.
