Jim Graddy and Bill Marrack have been practicing their 'cue technique for more than a decade, and have got it down right. Appreciative crowds spill out the door at lunchtime. Ribs are slow smoked, yielding the right, slightly al dente texture that confirms there's been no pre-cooking. Seasonings are just-right on both ribs and pulled pork, and Brunswick stew is a good, if not exciting, version of this classic 'cue companion. Anyone looking for other dishes should consider the sliced smoked turkey. There's a hot-smoked salmon, but served cold, too. Beer is the only alcohol. Old-school authenticity rules, right down to the Moon Pie for dessert and with an RC Cola---known here 'bouts as the Bubba lunch.
